Crock Pot Beef and Barley Soup

Ingredients:

1.5 lbs (680g) bite-sized pieces of beef stew meat

1 cup rinsed barley

4 peeled and sliced carrots

3 sliced celery stalks

1 chopped onion

3 minced cloves of garlic

6 cups beef broth

2 cups water

1 can (14 oz) undrained diced tomatoes

2 teaspoons dried thyme

2 teaspoons dried rosemary

Salt and pepper to taste

2 bay leaves

Ingredients:

Instructions:

Combine beef stew meat, barley, carrots, celery, onion, and garlic in the crockpot.

In a separate bowl, mix beef broth, water, diced tomatoes, thyme, rosemary, salt, and pepper.

Pour the broth mixture over the ingredients in the crockpot. Add bay leaves.

Stir thoroughly to ensure well-combined ingredients.

Cover and cook on low for 7-8 hours or until beef is tender and barley is cooked through.

Before serving, taste and adjust seasoning if necessary. Remove bay leaves.

Ladle the hot soup into bowls and serve.
