Cajun potato soup

Directions:

 

In a large pot over medium heat, add the oil. Once hot, add the sausage and cook until browned, about 3-4 minutes. Remove and set aside.

In the same pot, add onion, celery, and bell pepper. Cook until softened, 5-8 minutes. Add garlic and cook for 1 more minute.

Add Cajun seasoning, salt, pepper, paprika, cayenne pepper, chicken broth, and potatoes. Simmer for 20-25 minutes, until potatoes are tender.

Return sausage to pot. Add cream and cheese. Simmer for 5 more minutes, until heated through and cheese is melted.

Garnish with parsley and serve warm.
